Apple Strawberry Crisp Recipe
A dessert you wouldn’t even know was flour, gluten, and dairy-free!! And it’s Kosher for Passover too!
So this is one of those IYKYK things… and if you don’t, let me fill ya in.
Historically, while Passover is a wonderful, food-centric holiday, the desserts are usually BAD. It’s probably the whole, no flour, no leavening thing, which is the cornerstone of the holiday. When my friend, teacher, and rabbi’s wife, Ruchi Koval, mentioned this recipe in a group last week, 5 of the women in attendance were raving about how good it is and how they serve it all year round to many compliments.
So if you’re Jewish or not. Keep Passover or not. And especially if you’re gluten or dairy-free, I thought you’d like the recipe. I’m definitely making it for Passover this year!!
Apple Strawberry Crisp Recipe
Ingredients
Apple Strawberry Crisp:
7 Granny Smith Apples, peeled and diced
1 bag (8 oz) frozen strawberries - thawed and sliced
½ cup sugar
2 teaspoons lemon juice
½ teaspoon cinnamon
Crumb Topping:
(Ruchi’s notes said to ½ this - but I guess it depends on your fruit-to-crumb ratio preference)
2 ½ cups potato starch
1 cup sugar
1 egg
1 cup oil
4 oz ground walnuts
Instructions
Preheat oven to 350 degrees
In a 10” round pyrex dish layer diced apples and sliced strawberries
Sprinkle with sugar, lemon juice and cinnamon
Toss gently
In a separate bowl, combine topping ingredients by hand until resembles coarse crumbs
Crumble on top of apple/ strawberry mixture
Bake for 1 hour
