Bubbe Babe’s Meatballs
These meatballs are old school. Like it’s Greg’s grandmother's recipe. And no matter how much we make for a holiday - there is rarely a leftover to be found. The kids scarf it down.
I’ll give you the 1 lb recipe - but I typically double (or triple it).
Ingredients
For the meatballs
1 lb ground beef
1 egg
1 cup seasoned bread crumbs
¾ tsp garlic powder
½ tsp paprika
¼ tsp black pepper
¼ tsp salt (if using non-kosher meat) I omit salt bc kosher meat is salted
For the Sauce:
20 oz bottle of ketchup
2 cans whole cranberry sauce
¼ cup brown sugar
Instructions
Meatballs Preparation:
In a large bowl, combine ground beef, egg, seasoned bread crumbs, garlic powder, paprika, black pepper, and salt (if using). Mix well.
Form the mixture into 1-inch meatballs. Set aside.
Sauce Preparation:
In a pot, mix together ketchup, cranberry sauce, and brown sugar.
Add the meatballs to the pot, ensuring they are fully covered by the sauce. If needed, you can add some water or extra ketchup to ensure all meatballs are submerged.
Bring the mixture to a boil.
Once boiling, reduce the heat to a simmer and cover the pot.
Let it simmer for 40-60 minutes. Stir frequently until the sauce thickens and the meatballs are cooked through. If the sauce reduces too quickly, you can add some water to thin it.
Notes:
This recipe can be easily doubled or tripled, depending on the size of your gathering.
These meatballs freeze well and reheat easily, making them perfect for meal prepping or future events.
