Dairy Free Faux Oatmeal Raisin Cookies

This is a Passover dessert recipe that doesn’t suck. It originates from my friend Elana Mintz but I made some changes so it’s even better and the family loved it!

Ingredients

  • 2 c. matzo farfel

  • 4 eggs

  • 2 c. matzo meal

  • 2/3 cup coconut oil

  • ⅔  c. sugar 

  • ⅔ c dark brown sugar

  • 1  c. raisins

  • 1 c parve chocolate chips

  • Cinnamon sugar for top

Instructions

  1. Preheat oven to 350.

  2. Mix farfel, meal, sugar, raisins, chips, together in a bowl.

  3. In another bowl, beat eggs and add oil.

  4. Add eggs and oil to the mixed dry ingredients.

  5. Make golf ball sized  mounds with hands, make sure they’re firmly packed.

  6. Drop onto a parchment paper lined cookie sheet.

  7. Smush so they’re partially flat.

  8. Sprinkle with cinnamon sugar.

  9. Bake until lightly browned, about 20 minutes.
