Honey Garlic Chicken

I’m a lazy cook, especially when I’m having 35 people for a holiday dinner. So this recipe is uber easy and a crowd pleaser. I knew it was good when my sis in law Ally asked for the recipe!

I use bone in chicken thighs because they stay juicy (see I didn’t use that word so many folks freak out about that begins with an M). I also do not pan sear or flour the chicken and it still gets crispy.

Ingredients:

  • 6 chicken thighs (I prefer bone-in)

  • Salt, to taste

  • Pepper, to taste

  • Garlic powder, to taste

For the Sauce:

  • 6 cloves minced garlic

  • ½ cup honey

  • ¼ cup olive oil

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon low sodium soy sauce

  • ¼ teaspoon red pepper flakes

Instructions:

Prepping the Chicken:

  1. Season each chicken thigh with salt, pepper, and garlic powder on both sides.

  2. Place the seasoned chicken thighs in a baking dish. When cooking for a crowd, consider using an aluminum tray. If cooking 6 thighs, a foil-lined 9x13 pan works well.

Sauce Preparation:

  1. In a mixing bowl, combine minced garlic, honey, olive oil, apple cider vinegar, low-sodium soy sauce, and red pepper flakes. Mix well.

  2. Pour the sauce over the chicken thighs, ensuring each piece is generously covered.

Baking:

  1. Preheat your oven to 400°F (205°C).

  2. Cover the baking dish and bake the chicken for 1 hour.

  3. After an hour, uncover the chicken and bake for an additional 30 minutes, or until the chicken is crispy and beautifully browned. Baste as needed to keep the chicken moist and flavorful.

Notes:

  • Bone-in chicken thighs are recommended as they retain their juiciness better.

  • No need to pan-sear or flour the chicken – it still crisps up nicely in the oven!
