Dairy Free Faux Oatmeal Raisin Cookies
This is a Passover dessert recipe that doesn’t suck. It originates from my friend Elana Mintz but I made some changes so it’s even better and the family loved it!
Ingredients
2 c. matzo farfel
4 eggs
2 c. matzo meal
2/3 cup coconut oil
⅔ c. sugar
⅔ c dark brown sugar
1 c. raisins
1 c parve chocolate chips
Cinnamon sugar for top
Instructions
Preheat oven to 350.
Mix farfel, meal, sugar, raisins, chips, together in a bowl.
In another bowl, beat eggs and add oil.
Add eggs and oil to the mixed dry ingredients.
Make golf ball sized mounds with hands, make sure they’re firmly packed.
Drop onto a parchment paper lined cookie sheet.
Smush so they’re partially flat.
Sprinkle with cinnamon sugar.
Bake until lightly browned, about 20 minutes.
