Fire + Ice Pasta

Made this for a family get together and it was a hit!

Ingredients:

4 pints cherry tomatoes halved

½ cup quality olive oil

6 cloves minced garlic (2 tablespoons)

20 large basil leaves cut chiffionade 

1 teaspoon Kosher salt

½ teaspoon red pepper flakes

½ teaspoon ground pepper

1 lb dried fuscelli pasta

1 ½ cups grated parmesan cheese


Directions:

  1. Combine tomatoes, garlic, olive oil, red pepper flakes, salt, pepper, basil - cover with plastic wrap and let marinate at room temperature for 4 hours

  2. Cook pasta al dente in a pot with well salted water and a splash of olive oil

  3. Drain pasta well and combine with the tomato mixture

  4. Add cheese and more basil leaves, toss well.
